Who we are

Poplar Pastries is a small bakery/pastry shop specializing in delicious, handmade pastries. We are a husband (Ian) and wife (Georgia) team. Poplar Pastries specializes in yeast doughs, cakes, and other classic baked goods. Every one of our pastries and desserts are a labor of love.
Poplar Pastries is a specialty pastry shop with a hyper-seasonal menu. We always want you to have something new to try when you come in while still offering classic favorites daily. We are always open to suggestions and flavor ideas. Once we open this summer, we will offer pickup for pre-orders to save you some time.

About the Chef

Our head chef and co-owner Ian Willa has been a pastry chef for over twenty years. After graduating from the Culinary Institute of America in Hyde Park, NY in 2002, he worked in the Seattle area for twenty years learning as much as possible about all the different types of pastry. He was the head chef of Molly Moon’s Homemade Ice Cream and has worked for other big names like Wolfgang Puck. Ian has been a Chicago-area resident since 2023 and thinks Evanston is the perfect place for Poplar Pastries!
